Mary's Melt In Your Mouth Pecan Pie
1 1/2 cups sugar
1 tablespoon all purpose flour
4 eggs
2 teaspoons vanilla
2 teaspoons butter or rich flavored margarine such as parkay
Mix well and then add
3/4 cups light syrup
1 1/2 coarsely chopped or 1 2/3 cup halved pecans
mix
pour into unbaked deep dish pie shell and bake on cookie sheet for 50 - 55 min at 325 degrees or until crust is golden
Brenda's Bread Pudding
Take 4 slices of white bread , 6 if using French bread. Butter generously with unsalted butter , cut into squares . Place in a greased or Pam sprayed square dish. Spread with Marmalade or any sweet preserve such as Strawberry etc. Combine 1 cup of sugar , 2 beaten eggs , 1 small can of evaporated milk and one cup of regular milk. Pour over bread and let it rest for 15 minutes. Meanwhile soak 1 cup of raisins in hot water to swell then scatter over mixture. Place in a pan half full of water and bake at 350 degrees for 15 minutes. Add more milk at this stage and bake for a further 15 minutes. It should still be moist , and brown on top. Cook only until the custard is done.

Brenda's New Zealand Dessert
1 cake mix cooked in two pans. 1 can of sliced peaches drained. 1 carton of cool whip or whipped heavy cream. On one cake place the peaches and spread with cream. Place the other cake on top of cream and cover with more cream. Sprinkle with grated chocolate or slices of Kiwi.
Mary's Tropical Pudding
Combine 2 packages of banana instant pudding mix and two packages of coconut instant pudding mix and prepare as directed. Add half a large container of cool whip and mix well along with a handful or two of fresh frozen coconut or other coconut. Line a bowl or dish with vanilla wafers and bananas and then add half the pudding then add more wafers and banana slices top with the rest of the pudding and finish by covering gently with the rest of the cool whip. May sprinkle coconut on top if desired.
*May use low fat pudding and cool whip and 2% milk to make this a less fattening but creamy dessert.*
